Description
Assemblage #42, season 18/19 Hommage is made by macerating hand-picked full cherries and organic raspberries on young traditional lambic for at least four months, in a ratio of 760 grams of raspberries and 240 grams of cherries per litre. The fruit lambc is then blended with young lambic, and fermentation continues in the bottle. This raspberry lambic has an intense forest fruit bouquet, and evolves in the glass. Natural fruit, without the addition of juices, syrups, or sugars. Unfiltered and unpasteurised. This specific blend has aged for 4.5 months. The one-year and two-year lambics come from 6 different barrels and from 7 different breweries. Final fruit intensity of 350 grams of fruit (76% raspberries and 24% cherries) per litre of Hommage.
