Mixed-fermentation sour ale infused with local herbs and spices, fermented with Brettanomyces Lambicus yeast, and blended with a small amount of vintage saison.The base beer underwent primary fermentation using Brettanonyces Lambicus, matured in wooden vats for about 8 months, followed by a cold infusion of cascara (the skin and dried pulp of the coffee plant drupe).The spiciness finds space in the aromatic bouquet and in the flavour, with notes of red fruit, hibiscus, and hints of tobacco and coffee.Created to celebrate Ca' del Brado's fifth anniversary. This event takes place in winter, embracing a fabulous fairy tale imagery upheld by the whispers of the cold, steeped in wild legends and woodland mysteries on the edge of the Bolognese Apennines.Every year, this beer is born with the intention of being a unique project every time, as it is different every year that passes.
